Recipes

Potato Soup
Tula Prewitt, Frankfort

6 cups diced potatoes
3 stalks celery, chopped
1 cup onion, finely chopped
3 cans chicken broth, (14.5 oz. each)
4 cups half-and-half
6 tablespoons butter, melted (no margarine!)
6 teaspoons all-purpose flour
4 cubes chicken bouillon
1/2 teaspoon ground black pepper
In a large pot bring potatoes, celery and onion to a boil in 2 cups of th chicken broth. Cook until potatoes are tender, check occasionally for tenderness in potatoes with a fork. Drain and reserve the liquid. Combine the reserved broth with the half-and-half in a pot. In a bowl combine melted butter and flour. Stir into the half-and-half mixture over medium heat. Stir continuously until thickened. Add in reserved vegetables, remaining broth, bouillon and pepper. Heat over medium heat until bouillon is dissolved. Best served warm.

Oatmeal Cookies

1 cup shortening
1 cup brown sugar
1 cup sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon salt
3 teaspoons baking powder
1/2 cup chopped nuts
cinnamon-sugar mixture
Cream shortening and sugar; add eggs and vanilla. Beat until light and fluffy. Add dry ingredients. Stir well. Add oatmeal and nuts. Make dough into 1” balls. Roll balls into cinnamon-sugar mixture. Place on ungreased cookie sheet. Bake 8-10 minutes at 350º till light brown.

Dry Jell-O Salad

1 can mandarin oranges
1 can (20 oz.) chunk pineapple
1 box orange Jell-O (regular size)
1 small container Cool Whip
1 small cottage cheese
Drain oranges, pineapple well. Drain cottage cheese, separately. In mixing bowl mix oranges, pineapple; sprinkle dry Jell-O over fruit and mix well. Fold in cottage cheese and Cool Whip. Let chill several hours. Do not substitute crushed pineapple.

Spaghetti Casserole

1 lb. spaghetti
2 lb. chicken
1/4 cup onion
1/2 cup green peppers
small jar pimientos
16 oz. jar Cheese Whiz
2 cans cream of chicken soup
Fill one of the soup cans half full of milk. Cook chicken until done. Take the chicken out of the broth and cook the spaghetti in the broth, cook down real low, then add the rest of the ingredients and bake at 350º for 30 minutes.

Macaroon Kisses

1 -14 oz. can Eagle Brand sweetened condensed milk
2 teaspoons vanilla
1 1/2 teaspoons almond extract
2 -7 oz. pkg. flaked coconut
48 Hershey’s Kisses
Preheat oven to 325º. Line baking sheet with foil, grease and flour foil. Set aside. In a large bowl, combine milk, vanilla and almond extract. Stir in coconut. Drop by rounded teaspoon onto foil-lined sheets. With spoon, slightly flatten each mound. Bake 15-17 minutes until golden. Remove from oven. Immediately press candy in center of each cookie. Remove from baking sheet; cool on wire rack. Store loosely covered at room temperature. Makes 4 dozen.

Lace Seasoning

2 teaspoons chili powder
small amount salt and pepper
dash of oregano
dash of onion salt
Mix ingredients together. This is equivalent to one taco seasoning packet. Keep any extra in jar with tight fitting lid.

Jam Cake

4 cups flour
2 cups sugar
1 cup butter
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon cloves
1/2 teaspoon nutmeg
2 cups jam
1/2 cup buttermilk
1 teaspoon soda
6 eggs
Cream butter and sugar; add eggs, one at a time beating well after each addition. Sift flour and spices together. Dissolve soda in buttermilk; mix alternately with flour mixture, into butter and eggs. Add jam and mix well. Bake one hour at 350º. Bake in greased cake pan or bundt cake pan. Have a slice and a cup of coffee and enjoy! Delicious...Anita Holliman

Butterscotch Pie

1 1/2 cups light brown sugar
4 heaping teaspoons flour
2 cups milk
2 eggs
Cook over low heat until thick. Add 2 teaspoons butter, 1 teaspoon vanilla; cool. Pour into pie shell. Make meringue for top.
