Double Layer Chocolate Pie
Linda Broaddus, Richmond

1 1/4 cups cold milk
2 pkg. instant chocolate pudding mix
1 (8 oz.) pkg. thawed whipped topping
1 graham cracker crust
In a large bowl combine milk and pudding mix. Mixture will be thick. Whisk in one-half of whipped topping. Spread carefully over crust, spread remaining whipped topping on top. Garnish with chocolate curls. Ready in 5 minutes.

Honey Mustard Tenderloin

1 whole pork tenderloin, about 1 lb.
4 tablespoons honey
2 tablespoons cider vinegar
2 tablespoons brown sugar
1 tablespoon Dijon mustard
1/2 teaspoon paprika
Preheat oven to 375º. Trim all visible fat from meat. Combine remaining ingredients thoroughly. Coat tenderloin well with sauce. Roast at 375º fro 20-30 minutes, basting occasionally until meat thermometer registers 160º. Slice thinly to serve.

Barbecue Spam (or Treat)

1 can Spam or Treat
1 medium onion, sliced
1 bottle barbecue sauce
In a 2-quart casserole dish spread a thin layer of barbecue sauce on bottom. Slice Spam and layer on bottom of casserole dish. Place sliced onions on top of sliced Spam. Pour remaining barbecue sauce over Spam and onions. Bake uncovered in 350º oven for about 20-30 minutes. Simple and soooo good! My little three and five-year-old grandsons love this dish.

Heavenly Birthday Cake

2 1/2 cups flour, plain
1/2 teaspoon salt
2 teaspoons baking powder
4 eggs (room temperature, yolks and whites separated)
2 cups sugar (reserve 4 tablespoons)
2/3 cup butter, softened
2 teaspoons vanilla extract
1 cup milk
Preheat oven to 375º. Grease and flour two 9-inch cake pans. Sift dry ingredients together. In another bowl, beat egg whites with whisk until slightly stiff. Mix 4 tablespoons sugar into egg whites; set aside. In a large bowl, cream butter; add remaining sugar, beating until light. Beat egg yolks and add to sugar and butter mixture. Add vanilla. Add dry ingredients slowly, alternating with milk until ingredients are thoroughly mixed. Beat egg whites again and fold into cake mixture. Pour batter into pans and bake approximately 25 minutes.
